Once you've had beans on toast pimped up and topped with sauerkraut, you'll never turn back. My bestie Siân one described to me how she 'pimps' her baked beans and I loved it so much I've never made plain beans since. The best thing is you can literally use whatever you have lying around at the time so you'll never get tired of them because they're different every time.
We've used all sorts to pimp our beans including spices, herbs, worcestershire sauce, marmite, hot sauce, veggies, tomato puree, maple syrup and more! The possibilities really are endless, so get experimenting!
These are next level beans y'all and are (sorry, our inner nutritionist needs to speak) high in plant protein, fibre and a whopping 3 of your 5 a day. Get some wholegrain toast in there (we love seeded or rye) and you've got a gut-lovin meal whipped up in a matter of minutes. They look pretty damn fancy too, especially if you sprinkle over some seeds and fresh herbs like parsley. Breakfast, brunch or lunch will NEVER be the same again!
Ingredients (Serves 2)
1tsp rapeseed oil
½ onion, thinly sliced
10 mushrooms, sliced
½ pepper, sliced
1 x tin baked beans
½ tsp smoked paprika
½ tsp dried thyme
4tbsp Reclaimed Red Kraut (or other inferior kraut 😉)
Serving suggestions
Toast (however much works for you!)
Grated cheese
Mixed seeds
Fresh herbs, chopped
Lots of black pepper
Method
1. Heat the oil in a frying pan and fry the onions on a medium heat until golden.
2. Add the mushrooms and peppers and cook until soft.
3. Pour over the beans, add the paprika and thyme - stirring well.
4. Cook until the beans are hot then plate up. Top with your Reclaimed Red Kraut and whatever fancy sprinkles you desire.
5. Get it down you!
